There isn't a single Greek philosopher that we know of that hasn't had an huge impact on western civilisation. You may wish to begin with Plato and Aristotle, especially if you're looking at the central influence of Christianity in western civilisation. Then Socrates with regard to logic and countless other areas of thought. Then there are the pre-Socratic philosophers such as Heraclitus who have had a profound influence on western fields as wide as psychology/psychoanalysis and modern philosophy. Then there is Pythagoras, a philosopher and mathematician who had a HUGE influence in mathematics, and he continues to do so as some of his mathematics is still being studied and analysed. You've chosen a huge area of study. You may as well look at it this way: which ever area of western civilisation you wish to examine, a Greek philosopher stands at its origin. Do a websearch on Greek philosophers, you'll be amazed at the results.
