Don't compromise on the music. Having performed at over 500 weddings in my career as musician and DJ, it is too often the case that the brided (of Hellenic ancestry) tries to accommodate the non-hellenic guests by "tokenizing" the music, i.e., hire two bands or tell the DJ to play two Greek dances, period.
Music has no boundaries; Greek music is one of the most varied and rich out there, and you have nothing to hide.
