Your names are very difficult for the Greeks, I think they will say "Imy" and "Ritsel" (for example: John = Tson). I would write it just like this:
Αmy = Αιμη (with two points above the "ι" - one of them a little bit left and the other a little bit right from the "i")
Rachel = Ραιτζελ (also with the two points about the "ι").
