Jordan almonds represent the bitter and the sweet times a couple will share in their married life (the almonds being bitter and the candy coating, sweet). The almonds should be arranged in odd numbers (3 or 5) and placed in netting, tied with a satin bow. They are presented to the wedding guests at the reception before they leave. However, I have also seen them handed out in the church after the ceremony, probably for guests who will not attend the reception.
